On 28 October 2020, the new Signature Edition with a lot of Franconian heart and soul and "terroir" will be launched on the market.
St. Kilian Distillers will be launching their sixth signature edition at the end of October. The new SIX is based on a mild recipe and comes as a real "Franconian" - both the barley malt used is from Franconia, as well as the barrels from the Fürst vineyard right on the doorstep.
Special malt from Upper Franconia in use
The mild Signature Edition SIX is clearly the most "Franconian" whisky version from Rüdenau so far. As it is well known that whisky can only be made from three ingredients - water, barley and yeast - the type of barley naturally has a decisive influence on the taste. The special barley malt "Barke" comes from Bamberg in Upper Franconia from the WEYERMANN malting plant, which provides a very unique, pithy and very "cereal" aroma . The robust "Barke" barley has a larger grain diameter and is characterised by a flavour-intensive and pronounced body during brewing, which is accompanied by a pleasant and soft mouthfeel. This gives the single malt a perfect malt aroma with pronounced malty-sweet notes.
30 per cent of the Six matured in regional ex-Spätburgunder barrels.
The barrels of the noble, red Pinot Noir come from Lower Franconia, from the renowned and nationally known FÜRST winery in Bürgstadt on the Main. This magnificent area with its vineyards, the Main valley and the rolling hills - known as the region of "Churfranken" is also the home of St. Kilian. The SIX is a single malt whisky with real "terroir" and a clear reference to its homeland, even though the two other cask components in the form of rye and bourbon casks come from the USA. The notes from the rye bar rel underline the cereal character of the special Franconian malt particularly well.
