On October 28, 2020, the new Signature Edition with a lot of Franconian heart and "terroir" will be launched
St. Kilian Distillers is launching its sixth Signature Edition at the end of October. The new SIX is based on a mild recipe and comes across as a true "Franconian" – both the barley malt used is from Franconia, and the barrels from the Fürst winery are right on their doorstep.
Special Malt from Upper Franconia in Use
The mild Signature Edition SIX is clearly the most "Franconian" whisky version from Rüdenau to date. As whisky is known to be made from only three ingredients – water, barley, and yeast – the barley variety naturally significantly influences the taste result. From Bamberg in Upper Franconia, from the WEYERMANN malt house, comes the special barley malt "Barke," which provides a very unique, hearty, and very "grainy" aroma. The robust "Barke" barley has a larger grain diameter and is characterized in brewing by an intensely flavorful and pronounced body, accompanied by a pleasant and soft mouthfeel. This gives us a perfect malt aroma with distinct malty-sweet notes in the single malt.
The Six matured 30 percent in regional ex-Pinot Noir casks
The barrels of the noble, red Pinot Noir come from Lower Franconia, from the renowned and nationally known FÜRST winery in Bürgstadt am Main. This wonderful region with its vineyards, the Main valley, and the gentle hills – known as the "Churfranken" region – is also the home of St. Kilian. The SIX is a single malt whisky with genuine "terroir" and a clear connection to its homeland, even if the two other cask components in the form of rye and bourbon casks come from the USA. The notes from the rye cask particularly highlight the grainy character of the Franconian special malt.
