We present our new whisky Signature Edition "Two"
Fresh, fruity, full of character! Our second single malt whisky from the Signature Edition matured entirely in Italian Amarone red wine casks from the Valpolicella region. The special highlight? Maturation in three different cask sizes – for a complex balance of intense fruit and delicate spice.
Just in May, we celebrated our proud whisky premiere with our first single malt. Now our second whisky follows. Also double distilled in traditional copper pot stills – and like all whiskies in our Signature Edition, matured in a selection of excellent casks. "Our new summer bottling shows how creative experimentation and experience go hand in hand at St. Kilian – from malt to cask selection," states our Master Distiller Mario Rudolf. But what exactly distinguishes this whisky?
One Cask Type, Three Sizes
Special feature one: cask maturation. Three different sizes of Amarone red wine casks are used for our "Two": almost two-thirds of the whisky matured in 325-liter wine casks, a good additional third in 225-liter barrels, and a small amount comes from ex-Amarone casks holding only 50 liters. The reason? The complex interplay of fruity-light notes from the large barrels and spicy-intense notes from the small casks. In these, our whisky matures significantly faster – they provide a delicately spicy top note.
Our "Two" also presents itself as particularly experimental in its "mashbill" – that is, the malt recipe for distillation. For the first time, four different malt varieties are used, more precisely: Pilsner malt, Munich malt, Caramünch, and Melanoidin malt. Diverse grains provide additional flavor nuances.
The third special feature? The slightly higher alcohol content of our new bottling. "The powerful 54.2 percent by volume have proven to be just right to perfectly transport the fruity-complex aromas from the Amarone casks," says our Master Distiller Mario Rudolf. And they pack a punch!
Amarone Provides Aroma
Our "Two" gets its exceptional aroma profile primarily from full maturation in expressive Amarone casks. What makes this wine so special? After harvesting, the grapes dry for several months, losing up to half their weight and developing a high sugar and flavor concentration. This makes Amarone one of Italy's most sought-after wines – and gives this single malt whisky its fruity-creamy notes of fresh fruits.
